Pasta & Walnut Fruit Salad Recipe
Ingredients:
8 ozs of macaroni shells (uncooked)
8 oz of plain yogurt (low fat)
1/4 c of concentrated juice (orange, frozen); thawed
15 ozs of orange sections (Mandarin, canned); drained
1/2 c of sliced celery
1 c of grapes (red, seedless)
1 c of grapes (white, seedless)
1 pc of apple (red); cored and diced
1/2 c of walnuts; halved
For Garnish:
Lettuce (fresh); shredded
1 c of Strawberry (fresh)
Instructions:
Cook the macaroni as stated in the package instructions. Chill with (cold) water then drain them well. Combine yogurt and concentrated juice; blend them well.
Add oranges, grapes, apples, celery, cooked shells, and walnuts; toss them well. Cover then place inside the refrigerator till chilled. Serve above lettuce and garnish strawberries.
