Fruited Cheese Log Recipe
Ingredients:
1/2 c of dry apricots
1 pound of shredded cheese (Monterey-JAck)
1 tsp of poppy seeds
1/2 tsp of seasoned-salt
8 ounces of softened creamcheese
1/3 c of raisins (golden)
1/3 c of chopped dates
Cherries (garnish)
Chopped walnuts
1/3 c of dried sherry
Grapes (garnish)
Instructions:
Soak your apricots fully in a cup of water about 2 hrs. Drain once done then chop. Add in your cheeses. Blend in rest of the ingredients, have the fruits added last, and mix well between additions.
Turn into foil sheet then shape it into 9-inch log. Securely wrap then chill ’til firm. Have it rolled in nuts then cover w/ foil. Refrigerate for 24 hrs prior to serving. Garnish 1/ grapes and cherries.
