Chicken-Fruit Pilaf Recipe

Ingredients:

1 onion (medium); chopped
2 Tbsps of butter or margarine
1/3 c of celery; chopped
2 c of chicken (cooked); cut-up coarsely
1 & 1/2 c of heated water
2 Tbsps of raisins
1 & 1/2 c of uncooked rice (instant)
1 pack of mixed dry fruits (8 oz); sliced into fourths
3/4 tsp of salt
2 tsps granules of bouillon (chicken)
1/8 tsp of pepper
3/4 tsp of chopped thyme (fresh)
1/4 tsp of cinnamon (ground)
1/4 c of pecans (chopped)

Instructions:

In two-quart sized microwaveable dish, mix the butter, onion and celery. Place in the microwave without cover at high-temp for 2-3 mins or ’til onions are tender.

Add rest of the ingredients excluding the pecans. Tightly cover then put back in the microwave, cook for 10-12 mins. Stir after five minutes ’til water gets absorbed. Add pecans in.
