Alain Senderen’s Salade De Fruit Exotique Recipe
Ingredients:
2 Tbsps and 2 tsps of sugar (refined)
1/2 pc of vanilla bean; splitted
3 pcs of coriander seeds
1/4 tsp of 5-spice powder
Zest from 1 pc of lime
Zest from 1/2 pc of lemon
1 pc of clove (whole)
1/2 tsp of ginger (ginger); chopped
Mint sprig (fresh)
1 Tbsp of juice (freshly squeezed lime)
Mango
Pineapple
2 pcs of kiwis (large)
2 pcs of passionfruits; halved
Instructions:
Combine 1-1/2 c of water, sugar, (coriander) seeds, (vanilla) bean, five-spice, clove, zests, mint, and ginger inside a saucepan; simmer above medium heat, about 10 mins.
Set on the side, letting it cook. Add juice from lime.
Peel then slice the topmost part of pineapple; slice into four, lengthwise. Save 3 pieces of slices. Slice one piece crosswise to 1/8 inch thick.
Peel mango then slice (lengthwise) into 1/8 inch thick disk (parallel to pit). Peel kiwis then cut to half (lengthwise). Cut all the lengthwised fruits into wedges, make them thin.
Divide evenly then place on 4 (soup) bowl; arrange them decoratively. Strain saved syrup; divide it equally onto four servings and cover using plastic wrapper. Refrigerate for 1-4 hrs.
Scoop out the pulp from passionfruits and garnish on each serving. Serve.
